Furthermore, we gave them a real proof of our quality; actually, they had the chance to test the correct functioning of our machine with their particular flours, carrying out extrusion and drying tests, realized in our Laboratory.
Finally, our vast experience in the processing of gluten-free flours, reassured Monte Monaco, that identify us as the ideal Partner for the transformation of leguminous flours into pasta.
This was an ambitious and difficult project to realize, especially concerning the pasta producing process.
Actually, the legumes flour, being a gluten-free flour, is very difficult to treat, especially if not previously thermally treated; for this reason, it has been necessary to combine their Pasta Makers ability with a technologically advanced, personalized and reliable production plant.
We therefore projected, realized and installed a MAC250 plant for short-cut pasta production, composed by flours feeding device, a special Extruder, aa Pre-dryer, line automatisms, Dryers and accessories, all 4.0 mode operating.
We’re still in touch with Monte Monaco, because of their intention to implement their production with new shapes, but also to test new flours of their production.
Thanks to our cooperation and our capacity to supply the suitable machines for the transformation of raw leguminous flours, Monte Monaco is now able to successfully produce native pasta.
